Fabada Hispano Americana

Poner a remojar una libra (medio kilo) tazas de alubias con 3 ajos (sirve para ablandarlos) Remojar medio día o un día entero.

Freír la linguiza picante (chorizo portugués) con un poco de aceite y ajo picado. El sabor del mediterráneo. Puse dos tubos de 10 pulgadas cada uno.

Echar las alubias que remojasteis al chorizo. Poner agua destilada, o embotellada (que no tenga cloro).

Poner una cucharadita copeteada de Smoked Paprika (Pimentón). Le da el sabor a España.

Una pizca de crushed red pepers (guindilla). El sabor del indiano (emigrante retornado de México)

Poner perejil fresco sin vergüenza. Le da ese toque afrancesado y finolis.

Poner media a una tasa de Dry Sack (very dry sherry). Le da el gusto.

Poner uno o dos trozos grande de tocino (4” x 3” x 2”) cortado en cubitos de una pulgada.

Poner unas tres patatas medianas de cáscara roja peladas. Le da la textura.

Importante: Hay que cocinarla por mucho tiempo a fuego muy lento. Yo la cocino tres veces. Comienzo con un hervor y bajo el fuego a casi nada por un largo rato. Repito esa operación tres veces. Dos veces el primer día. Una vez en la mañana, otra en la tarde y después al refri. El último hervor el día que se sirve. Es muy importante dejar que la fabada se “añeje,” pues eso le da el sabor.

Nota: Esta es la receta de la fabada Asturiana desde exilio Norte Americano.

OPCIÓN: Morcilla es otra opción extra.

Tomar con vino tinto en abundancia (para ayudar a la digestión y evitar pedos en abundancia), y con pan (sweet french baggette, o bolillos y teleras Mexicanas).

Después de saborear este delicioso platillo, podrá usted decir con orgullo: YES, I AM A BEANER, and I am very proud of it!
